Happy Friday!!! This has been a very crazy week for us. Tom has been on a business trip in San Francisco since Monday and is supposed to come home today, but with the snow coming, who knows what will happen. I am just ready for the snow to be over with and the spring to be here. We keep getting teased here in the Northeast with some warm days and then it goes back to being cold. I guess this is just what happens when you live in New Jersey.
ONE
St. Patrick's Day!! We had a really nice St. Patrick's Day. AnnaLynne spent the day with my mom and sister, since I was working but then I met up with them at my moms for dinner. We had my mom's traditional corned beef and cabbage, which is just amazing!!! I was then able to get a couple shots of AnnaLynne and Nate on the couch. Trying to get an 7 month old and a four year old to sit together and smile, can be quite difficult, but they finally did it.

We had the privilege Sunday to have one of my oldest friends since third grade do pictures for us of AnnaLynne. She is an amazing photographer and if you live in New Jersey or around the area, you should definitely check out Kristen Boylan Photography. You will not be disappointed!!! Here is just a sneak peak of what she did for us.

So I am always looking for new recipes to try. I feel like though sometimes it needs to be easy, especially after coming home from a full day of working and try to get everything set for AnnaLynne and get dinner on the table. I saw this recipe on Pinterest and decided to give it a try. Trust me you will love it, plus I love that everything is all in one dish so less mess and clean up later.
Loaded Chicken and Potatoes Casserole
Ingredients
1 lb boneless chicken breasts, cubed
6-8 medium skin on red potatoes, cut
in cubes
⅓ c olive oil
1 tsp salt
½ tsp black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp hot sauce
2 c fiesta blend cheese ( I
used just plain cheddar)
1 c crumbled bacon
1 c diced green onion
Instructions
- Preheat
oven to 400 degrees.
- Spray
a 9X13″ baking dish with cooking spray.
- In
a large bowl, mix together the olive oil, salt, pepper, paprika, garlic
powder, and hot sauce.
- Add
the cubed potatoes and chicken and stir to coat.
- Carefully
scoop the potatoes and chicken into the prepared baking dish.
- Bake
the potatoes and chicken for 55-60 minutes, stirring every 20 minutes,
until cooked through, crispy, and browned on the outside.
- While
the potatoes are cooking, fry your bacon (about half a pound).
- Once
the potatoes and chicken are fully cooked, remove from the oven.
- Top
the cooked potatoes with the cheese, bacon, and green onion.
- Return
the casserole to the oven and bake for 5 minutes or until cheese is
melted.
FOUR
SPRING!!! With Spring coming and Summer right after that, I decided to get AnnaLynne some spring clothes to add to her wardrobe. I guess you can say that I am tired of the winter and the dark clothing. Carter's and Kohl's was having a great sale on kids clothes and I did a major stock up. If you are looking for some new things for your little ones I suggest checking them both out!!
FIVE
I've been trying to drink more water lately. I've seen so many recipes for detox water, and I have to say I have been enjoying this week the lemon, cucumber, and mint recipe. Again I saw these on Pinterest, so if you are interested check out Detox Water recipes.

Oh I hope Tom is able to make it home tonight! I'm in love with the pictures Kristen took of AnnaLynne! We will be having a session with her next month and I can't wait!
